Yes, many can tell the difference between good and not so good recordings.... but not many, in fact, hardly any, can tell the difference between good cheap recordings and good expensive recordings. It's very difficult to tell, these days, how much a record cost to produce just by listening to the sound of it.
Don't dismiss Rudy's work. It's been around a lot longer than Dego's, and the sounds he got with Coltrane and others still have a lot of engineers shaking their heads. Matter of factly, I'll bet 5 to 4 Leon Mar, (the Two Pages engineer) would love for someone to tell him his drum sound, for instance, is as good as the Blue Note recordings with Art Blakey or Max Roach.
But that's beside the point. Yes, there are TONS of great records recorded at home. Stu Matthewman records at home... do you think Sade's next will suffer, audio wise, compared to 4 hero?
Check out Zawinul's latest stuff. It's every bit as complex as "2 Pages" if not more.... all kinds of horns, percussion, etc... recorded in his Manhattan apartment with his son Ivan on the faders...
I'm sure this list could provide many, many more examples. I mean, people are recording major label stuff at home... Genie In A Bottle was recorded in a home studio... both Alanis Morissette records were recorded in a home studio.... hell, MMW's "Shack Man" was literally recorded in a shack!
