Sure you can. A very popular tool to do the trick is the Winamp based
SHOUTcast (http://www.shoutcast.com), that runs fine on a moderate
laptop which means you can easily stream eg. live DJ sets with good mp3
quality if the necessary bandwidth is available within the range of a
network cable. Works quite nice, actually. The mp3 stream sounds very
good, if the receiver has the necessary bandwidth available.
